It appears that summer weather (dare I say it?!) is here at last, and with that warmer weather comes the natural desire for cooler treats. If you, too, enjoy some summertime goodies then consider today your lucky day. In this first installment of my Summer favorites line-up I'll share one of our favorite ways to cool down in the summer heat. I even managed to take pictures!
Popsicles (Round 1)
We love popsicles during the summer. Fruity ones, chocolately ones, chocolatey-fruity ones, etc. This is a recipe that I saw on Facebook several months ago. It was one of those recipe video tutorials that a friend of mine shared, and I did not watch as we were still in the throes of winter thus making popsicles obsolete, in my humble opinion. But when the weather started to warm up, I decided to try to make my own without the help of any videos or recipes. After all, how hard can a popsicle be? The answer? Not even a little bit hard.
Tropical Coconut Cream Popsicles
You will need:
1 15oz can of full-fat coconut cream
Sweetener of your choice (I used stevia, but maple syrup would also be delicious)
Fruit of your choice (I used fresh strawberries and kiwi because it was what I had on hand, but you could really use whatever fruit you like best), about 1/2 cup, depending on how much fruit you want in your popsicle
Mix all the ingredients. Adjust sweetener amounts to your preferences. Pour in popsicle molds and freeze at least 8 hours. Enjoy!
